Black-Eyed Pea Croquettes

Review:
I like this recipe because it's quick and calls for only a few ingredients. The only aspect of this dish I don't like is that the croquettes tend to fall apart in the frying process. Therefore, I tend to only use a little oil in the frying pan.  I haven't tried deep frying them, which may help them stay together. Despite this small problem, I still love the flavors! I serve it with brown Jasmine rice.
