Roasted Portobello Sandwich

Review:
Mmm, this is a great sandwich that's juicy and oh so yummy! It takes a little preparation, but it's worth it!  Create your own variation with different spreads and toppings. I like to serve it with Garden of Eatin Blue Chips.

I adapted this from various recipes.

1 tbs olive oil
2 tbs soy sauce
2 tbs balsamic vinegar
2 cloves garlic
1-2 tomato slices
2 LARGE portobello mushrooms
1 large Kaiser roll, toasted
1 tbs Veganiase
1 small handful fresh spinach leaves, rinsed

1. Preheat oven to 400 degrees. Combine first four ingredients in a pie plate or glass casserole dish. Marinate portobellos for 20 minutes. Cover dish with foil and bake 30 minutes. Remove foil, flip and cook uncovered 10 minutes more. Option: Add tomato slices to the mixture and bake the last 10 minutes.

2. Prepare Kaiser roll with spread and spinach. Place portobellos on Kaiser roll and drizzle with remaining sauce or use as a dip.
